Hi, I’m Carrie Ellen, the founder of Mosh Ice Cream and Bake Shop. Opening this bakery has been a lifelong dream of mine, and in 2024, that dream finally became reality. Today, you can find me crafting pastries and ice cream in my commissary kitchen at Lottie & Zula’s.
My love for baking began in childhood, baking alongside my mom during holidays and special occasions. Over the years, that spark grew into a calling. While living overseas, I baked and decorated cakes for military families in England, and when I returned to the States, I pursued my passion professionally earning a degree in the Pastry Arts from The Art Institute of Las Vegas.
I was fortunate to hone my craft in some of the most renowned kitchens on the Las Vegas Strip, including Wolfgang Puck’s CUT, Spago, and Postrio. My pastry journey then took me across the country, from L’Auberge de Sedona to The Greenbrier in White Sulfur Springs, WV. In 2012, I found my forever home in Portland, Oregon, where I fell in love with the Pacific Northwest and its vibrant food culture.
Since then, I’ve had the honor of working as Executive Pastry Chef at The Nines Hotel, The Toro Bravo Group, The Waverley Country Club, and The Sesame Collective Group, as well as serving as a chocolatier at Woodblock Chocolate. Each of these experiences has shaped the craft and creativity I bring to Mosh.
At Mosh Ice Cream and Bake Shop, I believe food is more than flavor ~ it’s a memory. The smell of gingersnap cookies in the fall, the first backyard BBQ in spring, a birthday cake shared with family ~ these are the kinds of moments that connect us. My mission is to create pastries and ice creams that spark those core memories and bring heart to everyday life.
